Speculating future Kimjang

In order to adapt to the rapidly changing Anthropocene environment, unlike general food, how can the traditional food and food culture inherited by each country and nation change? ‘Genealogy Starter’ presents the concept of continuing its own taste and culture by using lactobacillus starter separated from the kimchi in the next generation. This project propose a method of inheriting the Kimjang in the Anthropocene era through a documentary video showing Kimjang in 2040s and 2060s.
With the help of Ji-hyung Ha, researcher at the World Institute of Kimchi, and the Seoul Science Center, study on kimchi starter was conducted. Alternative ingredients were presented based on the prediction of future climate change in Korea. |
